Her remarkable culinary skills did more than simply unite her family; they laid the foundation for a legacy. It was within the heart of Mama's kitchen that her eleventh child, Emilio, launched the Ortega Chile Packing Company.

Emilio's love for chilies ignited when he relocated to New Mexico in 1890, where he discovered the region's famed big red chilies. A few years later, upon returning to California, he brought back not only chili pepper seeds but also a treasure trove of recipes for dishes he had developed a taste for while in New Mexico. Residing with his family in their adobe house in Ventura, California, Emilio decided to plant the chili seeds. The chilies thrived in Ventura's temperate climate, producing an abundant harvest. Before long, Emilio had more chilies than he knew what to do with, prompting him to share them with friends and neighbors. Their enthusiastic response confirmed to him that he had discovered something truly special.
